days and nights

summer days and nights are so deliciously long, don't you agree? they make me want to savour every single moment, to squeeze the last little drop of time out of these lush, hot and happy summer weeks.

the beauty of it is, that there seems to be enough time to pour a glass of wine, flick through nigel slater's latest book tender, look out of the window or sit outside and watch the world go by.

p.s.: thanks so much jo, for that cookbook, it's a treasure, i'm enjoying it so much!

p.p.s.: is everybody apart from myself on holiday? just wondering.

I am so curious about that book. Love the cover.

Here's the recipe for the pasties:

Dough:

25 gr yeast
I teaspoon salt
3 dl water lukewarm
2 tablespoons oil
1 egg
9 dl flour

break the yeast into crumbs, add salt and water. Stir then add egg, oil and last the flour.

Leave the dough to yeast for 30 minutes.

Tuck the dough very thin and cut into 15x15 cm squares. Place 3-4 tablespoons of the filling and fold a triangle. A little bit of water on the edges helps. I use a fork and press. Now time for rest again - 30 minutes. Then brush with egg and sprinkle with poppy seed. Bake in oven 15 min, 225C.

Filling:

I used a big bunch of Swiss chard, garlic and spring onions + various herbs from the garden. First fry in pan then put in bowl. Add Feta cheese and mix (I use a rod mixer). Salt and pepper.

That's it!
